Beef Casserole for Baby

Often it’s the texture rather than the taste of red meat that babies object to. Mixing beef with root vegetables and cooking it slowly gives it a soft texture and delicious flavour.

Ingredients
MethodHeat 1tsp of oil in a frying pan. Brown the meat and set aside. Heat the rest of the oil in a saucepan. Add the onion, carrot and mushrooms and fry for 2 minutes. Add the garlic and fry for another 2 to 3 minutes. Add the flour and coat the vegetables, then add the tomatoes, stock, tomato purée, redcurrant jelly, Worcestershire sauce and browned beef. Add the thyme (if using). Cover with a lid, bring up to the boil and simmer for 1½ to 2 hours until soft and tender. Meanwhile, boil the potatoes for 15 minutes or until soft. Drain and mash with the butter, milk and Cheddar cheese. For young babies, purée the beef and vegetables and stir into the mashed potato. For older babies, chop the beef (it should be lovely and tender) and vegetables into small pieces. Spoon into small ramekin dishes and top with the mashed potato.

I'm just wondering what people used for beef stock - did you make your own (because I can't imagine many moms who have time for that!) The beef stock in the tetra packs or cans have a lot of salt in them, and I know babies aren't supposed to have salt. Any suggestions?

You can get very low salt stock cubes designed for babies - Boots sell them and also a lot of supermarkets sell a low salt range of stock cubes, I've noticed they seem to be mostly organic ranges. Hope that helps!

I was a bit put off by the list of ingredients for this recipe but decided to give it a go. Once the ingredients were prepared it was very straight forward. Very tasty, think I ate as much as my little one. The recipe made about 14 portions though. Not the 6 it said although I am not complaining!

My 7 months son enjoy this dish. Even my older daughters(who are poor eaters) eat this dish. I just add cream and they eat it up without much fuss. Thank you for this wonderful recipe.

My twin girls have eaten this for the past couple of months and there is never a drop left, lovely with pasta or mashed potato, highly recommend.
