Sweet Potato and Tomato

It can be difficult to get your child to move on from smooth purees to chewing more lumpy food. Stirring tiny pasta shapes like these tiny stars into your baby’s food is a good way to introduce a little texture. |
Sweet potato is more nutritious than ordinary potato as it is rich in antioxidants; it is also easier to digest and has a natural sweetness that appeals to babies. This delicious sauce is very versatile. It also goes well with fish or chicken.
Ingredients1 medium sweet potato (approx 250g) peeled and chopped MethodPut the sweet potato into a steamer and cook for 12 minutes or until tender. Meanwhile cook the pasta according to the packet instructions. Transfer the steamed sweet potato to a saucepan, pour over the Tomato and Basil sauce and add 6 tablespoons (75ml) of water from the bottom of the steamer. Cook over a gentle heat for two minutes. Remove from the heat and stir in the cheese until melted. Blitz the sauce in an electric hand blender and stir in the drained pasta stars.
