Cod & Spinach Puree

Ingredients

15g unsalted butter
80g leek, finely chopped
1 medium potato (approx 120g) diced
100 ml unsalted stock or water
75 ml  milk
2 handfuls baby spinach leaves , roughly chopped
100g fresh cod fillet, cubed
15g parmesan cheese, finely grated

 

Method

Heat the butter in a saucepan. Add the leek and sauté gently, stirring for 3 minutes. Add the potato and sauté for 2 minutes.

Add the stock or water  and milk. Bring up to the boil, cover and simmer for 8 minutes until the vegetables are tender.

Add the spinach and cod and stir over the heat for 3 minutes or until the spinach has wilted and the cod is cooked.

Stir in the cheese and puree until smooth in a food processor or place in a bowl and use a hand blender.

For older babies, mash with a fork..

Having tried and failed with a plain spinach puree yesterday, I found this recipe and thought I'd give it a go. Saves throwing out the rest of the bag of spinach! Well, my 8 month old absolutely LOVED it. So much so he had a second helping. It was his first real taste of fish too (apart from an Asda pouch of something salmony). Very pleased with his reaction and going on how much he ate today, I'd say it makes 3 portions. Thank you very much Annabel Karmel, I'll definitely be trying more recipes from here.

 

my little girl is 9 months, I started to give this her a few months ogo as a way of introducing fish, she seriously loves this dish

 

My 7 mo girl LOVES this, gulps it down whenever I make it, as does Daddy!

 

How many portions does this make?

 

Is it ok to use frozen fillets, thaw them, cook this recipe then freeze individual portions?

 

I do. I do it when I cook for me and my partner if there is left overs, so never crossed my mind that I shouldn't for baby. He's never had a problem from it, so all seems good.

 

I also want to know this so any help would be great - I dont think its worth the risk though, i might just go buy fresh
