Cod with Butternut Squash & Cheese Sauce

Try using Cheddar instead of Parmesan cheese and plaice or hake instead of cod.

 

Cod with Butternut Squash & Cheese Sauce

 

 

 

 

 

Ingredients

1/2 butternut squash, peeled and cubed
1 tablespoon of butter
1/4 cup onion, finely chopped
1 tablespoon plain flour
150ml milk
50ml vegetable stock
1 cup fillet of cod, skinned and
cut into small cubes
1 tablespoon Parmesan, freshly grated

 

Method:

Steam the squash for 7 minutes or until tender. Melt the butter in a saucepan and sauté the onion for 3 to 4 minutes.

Stir in the flour and cook for 1 minute.

Gradually add the milk and stock, bring to the boil, and simmer for 1 minute.

Add the steamed squash and chunks of cod and cook for 3 minutes. Blend to apurée and stir in the cheese

Makes 4 portions
Suitable for freezing
