Apricot Baby Food - Apricot Chicken & Sweet Potato
This apricot chicken baby food recipe is adapted from a recipe posted by Tammy Wilson in Dundee on my forum and its very yummy. Loads of people posted emails on the forum to say how much their baby enjoyed eating this. Why don't you try feeding your baby this delicious apricot baby food recipe with chicken and sweet potato.

Ingredients
MethodHeat the oil in a pan and saute the onion for 4 minutes or until softened but not coloured.Add the chunks of chicken thigh and sauté for about 2 minutes.Add the sweet potato and sauté for one minute.Add the chopped apricots and pour over the chicken stock.Bring to the boil, then cover and simmer for about 15 minutes or until tender.Blend to a puree.

A bit on the runny side but my boy seemed to really enjoy it and because he's a piggy I got 4 portions out of it. Might try letting it simmer with the lid off next time to see of it makes it less watery.
