Drooling Dinner in an omelette

Have cleared out my cupboards and fridge today so was using everything up and it became an omelette. Passed the toddler test and I quite enjoyed it too.

Ingredients:

2 potatoes sliced with a veggie peeler and then chopped finely
2 eggs
1 sweet red pepper chopped finely
4 cherry tomatoes chopped finely
1 red onion diced
grated cheese
good pinch of mixed herbs
little bit of cooked chicken chopped up

Method:

Heat sunflower oil in a frying pan and cook potato and onion for a few minutes then add chicken, tomatoes and peppers and cook a little more

Beat egg with a splash of milk, add herbs and pour into pan. Cook on a low heat until set.

Do not attempt to flip omelette badly and mutter obscenities so your toddler can now say "damn and blast"

Isabella had it with beans and said "dinner, it's nice" which is high praise from her ladyship

Sweetcorn would have been nice too xx

Sounds lovely abbie -will give this a go. I am not doing any more shopping now, just using up what we have in the fridge now before the shippers come in.

Abbie
Have you tried an omelette in one of your stones?

I whisk up the eggs pour into stone, I use my pie dish one, then chuck in whatever i have cook in oven for 15-20 mins.
Really really lovely and fluffy and of course no smell or mess!!

They are fab bake ware, I have a few different ones and love them!

I'm a Pampered Chef consultant and they sell loads of baking stones that mean you can cook without greasing/fat.

I made the AK recipe enchiladas in my deep dish baking stone yesterday and my MIL was amazed that I just scraped off what was left and rinsed it. I always use them now as I used to hate having to deal with burnt on food.[/quote]

Abbie do Pampered Chef still do those knives for children where they can cut fruit or veg up but not cut themselves? xxx

T'otherwise known in my neck of the woods as 'tortilla'. Spanish omelette to everyone else! Jolly nice it is too. xx
