Default Luscious Lamb (Slow cooker recipe)

Made this up today and threw it all in the slow cooker, have just served up to Finlay and had a taste and without meaning to blow my own trumpet........it's mighty good!!


Ingredients:
  • 8 Lamb Cutlets
  • 2 large Potatoes
  • 2 Carrots
  • 1/2 pack baby corn
  • 1/4 pack fine green beans
  • 1/2 pint Lamb stock (I used 2 lamb oxo stock cubes)
  • A good big squeeze tomato puree
  • a squeeze garlic puree
  • a sprinkle of Rosemary
  • Salt and Pepper
  • Olive Oil for sealing meat

Method

Cut green beans into thirds
Peel and cut carrots into thick juliennes and cut so same length as Green beans
Cut corn in the same way
Place in bottom of slow cooker
Peel and cut potatoes into thin slices and lay over the top of the veg
Heat Oil andFry the cutlets until browned on both sides
Place Cutlets on top of potatoes
In a jug, make up the stock wiht the Oxo cubes and boiling water and then add the rest of the ingredients. mixing well, then pour the liquid into the slow cooker
Cook on low for at least 6 hours, then enjoy

My slow cooker is a small one so the liquid didn't cover all the meat but this doesn't matter, it still cooks because of the steam so don't worry, I also gave mine a quick stir about 2 hours before then end of cooking time, I did it then as you're not supposed to lift the lid on a slow cooker or you lose an hours cooking time.

Just to say, be careful with the bones if you use lamb cutlets, slow cooking makes all the meat fall off the bone so watch for any little ones floating about in the gravy

This sounds lovely. I've just got into eating lamb again after 20 years of not doing, and was looking for a slow cook recp. Will give it a go! x x

Oooh sounds mighty yummy! When I have my new kitchen finished i've promised myself a slow cooker so this recipe will definately be one of first i try.

Talking of slow cookers, can you leave them on when you're out? Say put it on before i leave for work at lunch and then ready for teatime?

Yes Jewel you can leave them on, they are a very low wattage so no danger.

When I used to work full time I used to put it on in the morning then when I came in tea was cooked and the meat is so tender its mouth watering!!! (just prepared the veggies the night before) x x x

They are the best thing ever, chuck it all in, in the morning and then go out, don't think about it and when you get home, dinner is ready....fabby
