Default Banana Bread

Have messed around with this for a while but think I've got it right with a bit of help from my mum so here goes!

4oz Butter
6oz sugar
8oz self raising flour
2 eggs
2-3 very ripe bananas.

Mash the bananas in a bowl as well as you can and set aside.
Cream together the butter and sugar then beat in the eggs. Mix in the flour, then finally mix in the mashed bananas, beating until well mixed.

Grease a 21b loaf tin, pour the mixture into the tin and bake at 180 degrees for about 40 minutes, then lower the heat to 150 and bake for another 30 mins.

Turn out onto a wire rack and cool.

Enjoy!

I do this once a week as we always seem to have bananas that are too ripe for us to eat and I don't like throwing them away!

It keeps in an air tight container for about 4 days before going abit stale.

Thomas enjoys a slice for his breakfast sometimes!

It's on my list too... just a few days ago I had a ton of ripe bananas and was meaning to find a banana cake recipe. Thanks

Thanks for this. Got some ripe 'nanas in the freezer I need to use up and a bit fed up of the same old. We like banana bead for breakie too

mine has just came out of the oven, i changed the cooking times for my cooker, 25 mins at 180 and then i turned it to 150 for 10 mins and it has come out lovely, aubrey is munching on some at the mo. also i used stork marg and golden caster sugar
