Default Fruity chicken curry wanted!

On the old site annabel had a recipe for fruity chicken curry which I made and we all loved, only I didn't print it off! If anyone has it could you please post it or message me it. Thank you!

Smile kids fruity chicken curry

2 tbsp veg oil
1 onion peeled and chopped
1 clove garlic,crushed
1 med apple,peeled and thinly sliced
2 chicken breasts cut into bite sized chunks
1 tbsp korma curry paste
1/2 tbsp mango chutney
1 tbsp tomato puree
100g frozen peas
150ml coconut milk
1 chicken stock cube dissolved in150ml boiling water
salt and freshly ground black pepper


heat the oil in a wok or frying pan and saute the onions carrot for 3 mins.Add the garlic and saute for half a minute.Then add the apple and stir fry for 3 mins.Add the chicken and stir fry for 4 mins.
Add the korma paste,mango chutney,tomato puree,frozen peas,coconut milk and chicken stock and simmer for 10 mins.season to taste.

This makes 2 portions and is suitable to freeze.

I know the ingredients doesn't mention carrots but the method does, I do put in a carrot cut into small sticks,It's another portion of their 5 a day.

I never noticed that before, god that sounds yum, might cook this for hubby tonight! Who cares if it's for kids, also for big kids methinks!
