We have these for breakfast but they would be a nice snack too. Also handy for all those of you who are taking advantage of the offers on fruit at Tesco's at the minute.
Ingredients: 3 mashed bananas 2 cups blueberries (frozen work best as they don’t melt as quickly) 1 cup milk 1/4 cup splenda (or normal sugar) 2 eggs 1 tbsp baking powder 3 cups oats Mix all the ingredients together and let sit for 5 minutes. Spoon into a muffin tin (lined with muffin cases) and fill to the brim. Bake at 190/GM5 for approximately 25-30 minutes. PS: raspberries would also be yummy. |
