Default cheese and potato souffle

Hi, Jake had this last night and it wnt down a treat.

2tbsp butter
2tbsp plain flour
2lb of potatoes
8 eggs separated (i now it sounds like alot, serves 4 adults)
25g grated gruyere or emmental
50g medium cheddar
salt and pepper if u want (i dont)

Butter a souffle dish and sprinkle with a little flour.

Boil and mash the spuds, they need to be realy smooth. leave to cool. Beat egg yolks into cooled potatoes and add the cheese. add seasoning if using.

whisk egg whites untill they stand in peaks, then fold them into potato and cheese mixture untill mixed thoroughly. use a metal spoon to keep whites stiff.

Whack it into the dish and cook for 35-40 mins at gas mark 7, it should be risen and set.
