Scrumptious Chocolate meringue cookies
I usually double the quantity below and freeze it. Also I usually serve them frozen. I like the way they taste frozen better.
4 egg whites
1 cup sugar
300 grams (10 ounces) bittersweet chocolate
Beat egg whites while gradually adding sugar. Melt chocolate (I do it in bowl in micro) and pour slowly into beaten egg white mixture. Mix by hand with spatula.
Cover and put in fridge for about hour till firm (can stay longer if you need it to).
Preheat oven to 350 farenheit, 180 celcius. Put parchment paper (baking paper) on trays. Using two teaspons, spoon batter onto baking tray. (2 teaspoons-one to scoop and one to push sticky mixture off spoon or it doesn't come off). Or you can just make balls from mixture instead and put on tray. Bake for about 15 minutes till cookies look kind of cracked. Let cool and using spatula remove from parchment paper.
