Alexanders mummy is infamous around these parts
Default Fruity chicken casserole

I made this last night for our tea as a treat as Alexander had his MMR yesterday,it was really easy to make & very filling.

2 chicken fillets
1 chicken thigh (for lo)
4 tbsp of honey
3 carrots diced
3 sweet pots diced
2 rings of tinned pineapple chopped into small pieces
3 tbsp of pineapple juice
2 oz of garden peas
Enough veg stock to just about cover the veg.

I cooked the chicken in a seperate pan, then chopped the thigh into smaller pieces.
I put all the veg,pineapple,juice,honey & stock into a casserole dish,added the chicken & stock & cooked for 1 1/2 hrs at 180 c.
Just keep checking the water level doesnt dry out.

Thats it,enjoy!
