Default Chicken & Parsnip Bake

This is very easy to make & the flavours work well together.

4 chicken thighs
1 onion
3 medium sized parsnips
2 tbsp apple sauce
1/2 tsp grated nutmeg
1/2 tbsp lemon juice
75g unsalted butter
75g breadcrumbs
1/4 tsp paprika
Olive oil

Preheat oven to 180c.
Peel the parsnips & boil for 15 mins.
When cooked mash with the apple sauce.
Heat the olive oil in a frying pan.
Cook the chicken thighs & onion in the frying pan till cooked through.
Place a layer of the parsnip/apple mix in a casserole dish,then sprinkle with some of the nutmeg,lemon juice & dabs of the butter.
Repeat layering until all the mixture has gone.
Sprinkle the breadcrumbs on top & then the paprika.
Place in the oven & cook for about 25 mins.
I cut Alexanders chicken thigh up for him & placed a dollop of the parsnip/apple with it.

I serve this with baked potatos.

This sounds lovely and would like to have a go at making it but am I missing something with the layering process? Where does the chicken go?

oh Paula this looks lovely, we eat so much chicken and I'm always looking for new ways of serving it .. definitely going to give this a go minus the nutmeg
