Smile Ethan's Chicken and Pineapple

I made this for tea last night mainly because I love chicken and pineapple from our local chinese takeaway and wanted an alternative version that I could share with Ethan!

Ethan's Chicken and Pineapple

Enough for Mummy, Daddy and two 220ml baby portions

Ingredients

2 Chicken breasts - diced
1 large onion - chopped
3 medium carrots - quartered ans sliced thinly
150g frozen peas
1 small can sliced pineapple in juice
1 tbsp plain flour
1 dstsp vinegar
1 dstsp golden caster sugar
1 tbsp tomato puree
200ml water
1 tbsp sunflower oil

Method
Drain the pineapple, set aside the juice and chop into chunks.

Mix the pinepple juice, tomato puree, caster sugar and vinegar together in a bowl, set aside.

Saute the onions and carrots on the sunflower oil until softened.

Put the diced chicken in a bowl, sprinkle over the flour and turn until coated.

Add the chicken to the pan and stir until sealed.

Add the pineapple to the pan and cook for approx 2 mins.

Add the pineapple juice mixture to the pan and stir well.

Add the water and simmer over a low heat for approx 20 mins.

Add the peas and cook for a further 10 minutes or until sauce is to desired consistency.


We had this with boiled rice and it was yummy!

thanks sound FAB, i do something similar for a "lemon chicken" - i'll have to post that on here sometimes as LO can definatly eat it too. I suppose your recipe is a bit like sweet & sour chicken really. xx
