Default Chicken & Pumpkin Curry

Just bought a huge pumpkin & was wondering what to do with it all lol!
Just made this up so we havent tried it yet so not sure what it will taste like!

1 onion finely diced
4 chicken thighs
1 tsp garlic
1/4 tsp ginger
1 tbsp mild curry powder
400ml of coconut milk,i use the block
300ml water
500g pumpkin,cubed into small pieces
150g frozen peas

Cook the onion in a pan in olive oil.
Remove & cook the chicken.
When cooked cut into small pieces.
Return chicken & onion to the pan & add the garlic,ginger,curry powder,coconut milk & water.
Cover & simmer gently for 25mins.
Add the pumpkin,making sure there is enough water to cover everything.
Cover again & cook for 30mins.
Add the peas & cover & cook for 5 mins.
I might make sweet potato wedges to go with this but you could have rice.

Course you can i have even made some postman pat cakes that Alexander snuck into the trolley!

It smells divine,just hope it tastes good too x

that sounds really nice, I saw some pumpkins in the shops at the weekend so I may give it a go, thankyou x

How did it taste?

Pumpkins are also yummy in soup. Also cut slices or wedges and brush with olive oil and then roast-really yummy too!

Sounds really delicious, but I've never had pumpkin before. Im trying to be a little bit more adventurous in the kitchen, mainly thanks to Tam's great recipes, so I think Im going to give this a whirl xxx

I used to be put off pumpkin by the texture and smell when hollowing one out for halloween but it's far nicer cooked xx

Let me know how it goes down with your little one as my baby girl is the same age and I want to broaden the variety for her little taste buds.
