Spicy Butternut Squash soup

I've made loads of versions of butternut squash soup and this was far and away the nicest. The cumin added a lovely warm flavour and it's not too spicy. Isabella scoffed the lot and Daddy declared it yummy and took leftovers to work today.

Ingredients

1 Butternut squash peeled and diced
2 Sweet Potatoes peeled and diced
2 Carrots peeled and diced
1 onion peeled and diced
1 red chilli deseeded and finely chopped optional (does make it very hot)
2 cloves garlic finely chopped
1 tsp garam masala
1 tsp cumin
Chicken stock to cover (or water!)
a little sunflower oil

Method

Heat the sunflower oil in a pan and saute the onion and garlic for a few minutes. Add the chilli and the veggies and cook uncovered for another few minutes. Stir in the spices and pour over enough stock to cover everything.

Bring to the boil then simmer for 25-30 mins ish or until the veggies are tender. I removed some of the liquid before blitzing with a hand blender so it wasn't too runny.

We had this for dinner last night with some of those little seeded rolls you finish off in the oven yourself mmm.

Sounds lush! I haven't made soup in ages and Ethan loves anything containing curry powder so this might be a winner!

I'm just gutted that OH liked it so much as there was none left to freeze for Isabella

Hubbie went out and brought me a chilli. so we have just had dinner so i am going to make it now, ready for tomorrow xxx

just finished making it, OMG so nice. so it's all ready for dinner tomorrow.
it's really spicy which hubbie and i just love, the hotter the better for us. but not sure if it is too spicy for aub's (saying that there is only one way to find out

) i used a medium red chilli, maybe i should of got mild
how did Isabella get on with it. xxxxx

this sounds totally delicious.....not made a soup before but am def going to be going out and buying the ingredients for this...oliver used to love butternut sqaush and sweet pot so it mite get him eating again! thanks hun! x x x x x x x x x

I'm not sure what strength chilli I used but mine wasn't that spicy really. It was quite a small one though!

Isabella is just the cutest, i love it when they use there fingers x

It was quite a big chili

but it does taste so lovely. i'm tempted to have some tonight

(well i am eating for 2) and hubbie loves it

Maybe i will put abit of cream in tomorrow for aub's .
