Post Super Salmon Pie

We have this for tea about once a week. Salmon is a superfood, hence the name! We all love it, which is surprising as Mr H used to be a fish dodger!

Super Salmon Pie
Serves 2 hungry parents, 1 baby plus 2 or 3 extra portions to freeze.

2 salmon fillets
Half a pint of whole milk, plus extra for poaching & mash.
20g plain flour
20g un-salted butter
150g frozen peas
150g sweetcorn
2 carrots - diced
Brocolli florets
400g potatoes - peeled and diced
80g mild cheddar cheese
A handful of breadcrumbs
Pinch of pepper

Method

Poach the salmon in water or milk until cooked. Flake and set aside.

Cook the peas, sweetcorn, broccoli and carrots.

Boil the potatoes. Once they are cooked, mash with a splash of milk.

In the meantime make the cheese sauce.

For the Cheese Sauce
Melt the butter in a saucepan.

Add the flour and cook for approx 1 minute.

Add the milk slowly, a bit at a time, stirring constantly this is the key to making a smooth sauce.

Once all the milk is added, bring to the boil, stirring constantly then lower the heat and simmer for a minute or so.

Stir in 30g cheese and a good pinch of pepper.


To assemble the pie, mix the flaked salmon & drained veggies into the cheese sauce.

Tip the mixture into an oven proof dish.

Top with the mashed potato.

Sprinkle evenly with the cheese and breadcrumbs.

Cook in a 200 degree oven for approx 25 minutes until the topping is golden.

yum yum sounds lush! im forever buying salmon because i love it and its great for the kids. deffinatly try this one.

Sounds scrummy Ellie.

I ruined my roux sauce earlier as the doorbell rang and although I took it off the heat it still went bumpy. It was at the vital stirring stage

Luckily my 2nd attempt was fine and lasagne is in oven. xxx

It sounds lovely! Im not mad keen on salmon and Im trying to get into it, I have made salmon cakes for tea tonight.

Would this work with cod? xx

Yeah, it would definitely work with cod too, you could use any fish you wanted really! I chose salmon because it's an oily fish.

Tell him you will make fish pie every night in exchange for another baby. That should stop the fish pie nagging!

This looks yummy.

I was in M&S today buying some food and I noticed that they sell liquid fish stock in pouches. I havent tried it but was thinking that maybe you could poach the salmon in fish stock and use half milk and half stock to make the sauce. You could saute some onions . then stir in the flou and then the stock and the milk..
