Default butternut squash

does anyone have recipies that i can use butternut squash in keep wanting to try my lo on it but dont know what to do with it part from mash it

Hi, my LO loves this, I roast it and as it is so sweet I tend to use it to mix up with other things so she cant taste the things she don't like so much, and mix it in with cous cous. sorry haven't been much help, I'm sure there are loads but im rubbish at thinking them up! xx

Look up a squash risotto recipe - that's gorgeous - with lots of sage and garlic! My daughter loves it. We put chicken stock, a bit of wine (think the alcohol boils off) and some parmesan in too. V nice. xxx

Gordon Ramseys wife Tana has a new cook book out with a recipe in it for Butternut Squash lasagne, looks really yummy and really quick and easy to make ... she did it one morning with Fern and Phil. Instead of pasta sheets she used spaghetti and this could be cut up for lo's. Looked nice xx

Quarter the squash, de-seed, brush with melted butter. Roast until tender. When cooled, peel and then mash the pulp very well. You can do this a day before. Re-heat the squash (double boiler or in the microwave). Just before you serve it, grate fresh nutmeg into it and stir in a good dollop of marscapone cheese. You will not believe how delicious this is!!! And the cheese gives added protein & calcium, plus the fat from the cheese helps you to absorb the other nutrients in the squash. Haven't tried this on my lo yet (he can't have cheese), but everyone in my family loves this, and my friends' kids will eat it, no problem.
