4 skinless chicken thighs,diced
1 onion,finely chopped
1 yellow pepper,skinned & chopped finely
1 courgette,finely chopped
1 garlic clove,crushed
1 tsp paprika
pinch chilli
1 tsp rosemary
175g brown rice
1/2 tin of toms chopped
Cook the chicken for 5 mins till browned.Transfer to a plate.
Add the onion,pepper & courgettes & cook for 3 mins.
Stir in the garlic,spices,rosemary & rice,fry for 1 min.
Place the chicken back in the pan,add the toms & 350ml of boiling water.
Bring to a simmer & cover.
Reduce to a low heat & cook for 25 mins.
