Chilli lamb & sweet potato cakes
500g lean lamb steaks cubed
Juice of 1/2 lemon
1/2 tsp chilli powder
1/2 tsp ground cumin
1 clove garlic crushed
800g sweet potato,peeled & roughly chopped
2 tbsp coriander
150g pot greek yogurt
Mix the lemon,half the chilli,the cumin & garlic,rub it into the lamb & leave for 1/2 hr.
Boil the sweet pot,drain & mash,mix in the reamining chilli & half the coriander.Let it cool for a bit then shape into 8 cakes.
Cook the lamb in a pan,till cooked through.
Remove from the pan,lightly coat the pan with oil & add the cakes,fry for 4 mins each side.They should be nice & crispy.
Mix the remaining coriander with the greek yogurt.
Put the cakes & lamb onto a plate & add a good dollop of yogurt.
I always blend Alexanders lamb down a little for him.
