Default Lamb stew & dumplings

Lovely on a cold night.

400g diced lamb steak
1 onion,chopped finely
2 sticks celery,chopped finely
600ml veg stock
15g plain flour
300g carrots,chopped into small cubes
250g swede,chooped into small cubes
1 leek shredded

dumplings
150g sr flour
1 tbsp thyme
1 tbsp olive oil

Preheat oven to 150c
Brown the lamb for about 5 mins.Set aside.
Cook the onion & celery in same pan for 5 mins,add a little stock.
Stir in the flour & gradually add the rest of the stock.
Add the lamb to the casserole & add the carrots & swede.Bring to a simmer,cover & cook in the oven for 1 & 1/2 hrs.
Make the dumplings by placing the flour,thyme & oil in a bowl,add enough cold water to make a soft dough.Shape into small balls.
Mix the leek into the stew & put the dumplings on top too.
Cook for another 1/2 hr.

Nice warming food.

The leg meat cut into steaks,& shredded leek is leek cut into very small slices.

can you buy lamb steaks (ready cut), or do you have to go to a butchers to ask for it.

You could freeze the stew but i wouldnt freeze the dumplings x
