Default Tammy Wilsons Apricot Chicken & Sweet Potato

I logged in today to see that all of the forums have been changed. I got this recipe last week and was hoping from some more great stuff for my 6 month old son.

this on'e a keeper nevertheless... thanks Tammy

APRICOT CHICKEN AND SWEET POTATO

Suitable from 6 months
Prep time 6 mnutes
Cooking time 25 minutes
Suitable for freezing
1 tbsp sunflower oil
40g chopped onion
2 chicken thigh fillets (approx 175g), trimmed and cut into pieces
200g sweet potato, peeled and chopped
8 dried apricots, chopped
400 ml chicken stock
Heat the oil in a pan and saute the onion for 4 minutes or until softened but not coloured. Add the chunks of chicken thigh and sauté for about 2 minutes. Add the sweet potato and sauté for one minute. Add the chopped apricots and pour over the chicken stock. Bring to the boil, then cover and simmer for about 15 minutes or until tender. Blend to a puree.
MAKES 5 PORTIONS

Default I make this all the time

But today was out of apricots...so used apples instead-was good but not quite as good.

Annabel-can you put up your version of this recipe too? Never remembered to copy it down.

Hi all, is it a big deal if the sulphur dried apricots are used? i cant find any others in the shops?

Crazy Jacks do sulphur free apricots and I bought mine in Tesco, you can also buy the Sainsbury's own taste the difference ones xx

Whitworths do an organic one that is SO2 free too. They have been rehydrated so are a bit softer for lo's to eat. Isabella will eat these as finger food but not the Crazy jacks ones.

Has anyone noticed that heinz now have a toddler dish for 12+ months 'Apricot chicken with rice', strangely has got the same ingredients, including sweet potato plus a few extras including rice.



Hmmmmm, wonder if someone is watching us.......
