Talking Katie's Spanish Tortilla

Helllooooooooooooooooooooooooooooooooo

Mr Bug made this for Katie and OMG it's YUM:


Ingredients
~ Butter or vegetable oil
~ 2 eggs, beaten
~ 2 sliced medium potatoes, boiled (take out before too soft)
~ 1 roasted and peeled red pepper, deseeded and chopped
~ Optional splash of milk
~ Cheddar or feta cheese, crumbled (say, 50g??? Use as much or as little as you want - and remember cheese can be salty )


Technique
~ Preheat a small frying pan (omelette pan best). Put in a wee knob of butter/splash of vegetable oil.
~ Whisk up the eggs in a big bowl, with splash of milk (optional).
~ Add peppers and potatoes to same bowl. Mix up and pour onto hot (not like smokin hot though ) frying pan.
~ Reduce heat on pan.
~ Cook til mostly set, but still slightly runny on the top.
~ Dot crumbles of cheese over the top.
~ Pop under the grill for 5 minutes, still in the pan.
~ When it's ready, take it out and flip it onto your plate upsidedown (the omelette not the plate hehehehehe)



We chop it all up and Katie eats about two thirds of it. It's fab for adults too - but if Mik was making it for us, he'd add salt to the egg and potato mix, and he'd also chuck in some chorizo mmmmmmmmmmmmm

It is yummy cold (honest) so I suppose you could make it the night before and serve it for lunch. Don't reheat it though. It can't be frozen.

Yey my first recipe on this site ever!!! Wooohooo! It only took a year, and the recipe still ain't mine heheheh could still publish it, eh? LMAO

OMG that sounds like heaven. Isabella loved the potato omelette at the tapas place we went to the other week and so did I
