Default Isabella's favourite Lunch

She had this today and cried when it was all gone

1 120g can sardines, skinned and boned in sunflower oil
Tomato puree
handful of mixed leaves - I used spinach and watercress
100g cooked brown rice


Drain and mash the fish, add a good squeeze of tomato puree, finely chop the spinach and watercress and mix it all together with the rice.

Really easy and yummy. We sometimes have it minus the rice mashed onto fingers of wholemeal toast.

we love sardines too, we normally have it on toast/crackers. but will definatly try this. mmmmmm i could eat it now

I haven't tried sardines yet, good idea. Is there a low=salt kind that you can get somewhere? Do you cook the leaves first? And do you use passata or the tomato concentrate in a jar? (How I can have so many questions about something so simple, I do not know, but there you are...)

I bought some sardines in sunflower oil a few weeks ago and haven't got round to giving them to Ethan yet so, thanks for this, I might give this one a go later in the week!

Victoria,

The 'in sunflower oil' ones I bought seemed really low in salt http://www.johnwest.com.au/Sardines/...-Oil-110g.aspx

I used tomato puree that comes in a squeezy tube as this works out the cheapest when you're only using small amounts.

I didn't cook the leaves first as she eats them raw happily. I did chop them really finely anyway xx

Isabella has the rice warm but I'd imagine it wouldn't matter either way.
