Courgette & chicken rosti
1 sweet potato
1 small onion
1 grated courgette
2 chicken thighs,cooked & stripped into little shreds
1 tsp mild mustard
Preheat oven to 200c.
Cook the potato in the oven till cooked through.Cut in half & leave to cool.
Place the grated onion,courgette & chicken in a large bowl.
When potato is cool enough mash the flesh into the chicken mix.Mix them all together well.
Add the mustard.
Form into 6 patties about 2cm thick.
Put on a non stick baking tray & cook for 25 mins,turning once.
