Made this the other day as I had sweet pots and bacon to use and it was very yummy. Hubby had loads of it and said it's the best one I've made yet
![]() Ingredients: 1 pack smoked back bacon, chopped up into pieces 3 sweet potatoes 2 pints chicken stock 1 onion finely diced Olive Oil Black pepper 2 tsps garlic purée 2 tsps Paprika (not smoked cos you have the smokey bacon )Method: Preheat oven to 200, peel & chop sweet pots into chunks and place on a baking tray. Drizzle with some olive oil and roast for approx 10-15 mins until soft. Whilst that's cooking, soften the onion in a little olive oil, being careful they don't "fry" and turn brown. Add your chopped up bacon pieces and cook until almost fully cooked. (drain off any excess fat) then add the garlic and Paprika, cook off for about 30 secs-1 minute then add your stock. Potatoes should be done once you have done the above. Take them out and add to pan. Bring to boil then reduce to a simmer for 5-10 mins. Then blend and season to your liking I found it didn't need any salt as you get the salty-ness from the bacon ![]() Enjoy xx |
