Default Satay patties

Came up with these when mixing something for dinner last night.

Ingredients:
500g mixed mince meat (half beef, half pork)
1 small courgette (about 100g)
3-4 mushrooms (about 50g)
1 small onion
1/2 red pepper
2 tblsp satay sauce
1 egg
Little oil for frying

Method
Prepare veg (wash, celan etc), cut into large chunks then blitz up till finely chopped in a blender, or finely chop them if you don'thave a blender.
Mix all the ingredients together.
Form into patties and fry in a little oil over medium heat (too high and they will burn too quickly). With a non stick pan you should only need the tiniest bit of oil or none at all.

A few notes:
Over here a half and half beef and pork mince is fairly standard but they would work as well with any mince - beef, pork or even chicken
If you don't want to use satay sauce then maybe use something like hoisin sauce or even ketchup
I found the mix was quite moist, but they held together well and made nice moist patties when cooked. If you think yours is too wet you can always add some breadcrumbs.
I used desertspoonfulls of the mixture to make the patties and got 16.
