Fish Finger Pie
Hey ladies - long time hey?
I made this for tea tonight and it went down a storm so I thought I would share...
600g (about 6 medium) potatoes
Milk
Butter
16 fish fingers
1/2 an onion
1 tin of tomatoes
2 rounds of spinach, chopped (i used tesco frozen, it comes frozen in circles)
1 tbsp tomato puree
2 tsp sugar
salt and pepper
100g cheese
Preheat oven to 200 degrees
Peel and dice the potatoes and put on to boil
Grill fish fingers
Fry onion until soft
Add tomatoes, spinach, sugar, puree and seasoning
Bring to the boil and then simmer for a couple of mins
Lay the fishfingers in the bottom of a dish (like you would use for lasagne)
Pour over the tomato mixture
Mash the potato until smooth and add some milk and butter
Add 50g of cheese to the potato
Spread the potato on top of the tomato mixture
Sprinkle on the rest of the cheese
Bake for 30 mins
