This is full of veg that melt away so little ones just get the yummy flavours and loads of veg going down so I love serving this up. I made it up after eating a moroccon chick pea pate. I just noted all the ingredients and adapted it to this lovely one pot meal! It's also very nice if you leave out the chicken which makes it cheap too!
Itbsp olive oil I large onion 2 carrots 1 large courgette 1/2 cauliflower 1/2 aubergine 1 good sized potato 400g diced chicken breast 1/4 tsp cumin 1/4 tsp cinnamon 1/4 tsp coriander 1/4 tsp turmeric 1/4 tsp ras el hanout 1 tbsp tomato puree 1/4 tsp lazy chilli ( I don't want to chop up a fresh chilli then be wiping little faces!! )1 can chick peas 1 can chopped tomatoes 1 tbsp honey 200ml veg stock That sounds like a lot of ingredients but it really is very quick and easy Dice up all the veg and fry in the oil, add the chicken and the spices, fry together for a few minutes, add everything else and simmer for 45 mins to an hour.
