This was a hit with my three year old and OH tonight...
little sunflower oil 1tsp fresh ginger, grated 1 large clove garlic, grated small onion, grated half tsp turmeric 2 tsp mild curry powder tiny bit of minced red chilli, to taste tin coconut milk 150ml veg boullion 150g green beans, halved pack of baby sweetcorn, halved couple handfuls frozen peas 150g large cooked prawns 1 salmon fillet, cut into bitesize chunks 1 lime Fry onion, garlic and ginger in oil for a few mins. Add spices and chilli (if using) fry some more till fragrant. Add coconut milk and veg stock bring to boil, add green beans and simmer five minutes, then add baby sweetcorn and peas and simmer another five minutes or so. Add seafood and cook through (5mins or so). Cut the lime in half - add a generous squeeze of the juice, then serve with leftover lime wedges. OH and I add minced chilli to ours when served (we buy it in a jar, called 'sambal oelek', from Chinese/Thai shops), and extra lime juice. Fresh coriander is also nice scattered on top. Serve with basmati rice. Easy peasy! |
