we had roast lamb on sunday for lunch and had loads left over really tender slow cooked meat so used it to make this and it was absolutely yummy
Cooked lamb but could use lamb mince (prob 250g would be enough) 1 carrot diced An onion diced Small tin chopped toms 1/2 tsp cinamon 1/2 tsp thyme Leftover gravy from roast but could us lamb stock (prob 1/2 pint) 3 mediumish sized potatoes thinly sliced 1/2 pint cheese sauce (used Ellie H's super salmon pie cheese sauce recipe) Fry the onion and carrot in a bit of olive oil for about 5 mins, then add the meat, stir in the chopped toms and gravy or stock (if you use stock you may need to add a bit of flour first) and the herbs and spices and simmer for 15 mins or so. In the meantime parboil the sliced potatoes for 5 mins and drain and make your cheese sauce. In an oven dish put a layer of meat, then cover with a layer of potatoes, they a layer of cheese sauce and repeat. Bake in the over for about 45 mins (i did at about 170 degrees C in fan oven) This made 3 very generous portions. |
