Personally, I would experiment with cornflour and skimmed milk (just use the amount of cornflour recommended to make white sauce with full fat milk). Alternatively, you could look at no fat yoghurt, low fat creme fraiche etc.

I made lasagne the other night and put a layer of grated courgette in the middle which worked quite well. This would lower fat content as well as all the other tricks.

There's no difference to the recipe when you are using low fat or full fat milk in white sauce. You are basically replacing one liquid with another so you use the exact same amount. It works just fine and there really isn't much of a taste difference.

I've made it with skimmed, semi skimmed, full fat. It's a bit creamier with the full fat but otherwise not much difference. As DrP said, just make as normal.

I'm a semi-skimmed person too but also like using creme fraiche instead of white sauce.
