Lamb with Butternut Squash, Courgettes, Apricots and Tomatoes
Portions 6 (each portion is 4 tbsp) 175g diced lamb 1 onion diced 1 garlic clove, crushed ¼ tsp ground cumin ¼ tsp ground coriander ¼ tsp ground cinnamon 400g tin of chopped tomatoes 100ml of water 1 courgette, sliced 1 small butternut squash, peeled and chopped 5 dried apricots
As I make this for my 7mth old I then put it in the food processor and blitz to a smooth consistency. If you were to make it for a toddler or a meal for yourself then you could eat it with rice. Megan loves it!!!!! ![]() |
