Drooling Lamb with Butternut Squash, Apricots, Courgettes and Tomatoes

Lamb with Butternut Squash, Courgettes, Apricots and Tomatoes

Portions 6 (each portion is 4 tbsp)


175g diced lamb
1 onion diced
1 garlic clove, crushed
¼ tsp ground cumin
¼ tsp ground coriander
¼ tsp ground cinnamon
400g tin of chopped tomatoes
100ml of water
1 courgette, sliced
1 small butternut squash, peeled and chopped
5 dried apricots

  • Heat some olive oil in a large heavy base sauce pan and brown the lamb and set aside.
  • Add some more olive oil and onion and cook gently until soft and golden.
  • Add the garlic and spices and cook for 2 minutes
  • Then return the lamb back to the saucepan.
  • Add the apricots, the canned tomatoes, water, courgettes and butternut squash and simmer for 1 hour 45 mins. Check the level of the liquid and top up if you think it needs it.



As I make this for my 7mth old I then put it in the food processor and blitz to a smooth consistency. If you were to make it for a toddler or a meal for yourself then you could eat it with rice.
