Default Chicken and potato pie...

Hello

I'm a newbie to site - so hoping this is an OK post! I was just wondering if anyone has recreated or found a recipe for Chicken and Potato Pie - like the AK eat fussy one. It's delicious and would love to make a batch ... but dont want to mess up and waste lots of ingredients...

Well after the post - I decided to stop being a wuss and just started to experiment... and what came out of the oven was easy and pretty decent so thought I may as well share it! Not quite the same as the AK version - but in a similar vein.

one medium onion, one medium leek, one medium carrot, 3 chicken breasts, - all chopped up small.
Sprinkle of flour,
200ml lo-salt vegetable stock,
splash of apple juice and splash of wine.
3 dessert spoons of tommy sauce and 3 dessert spoons tommy puree.
Generous pinches of oregano, marjoram and parsley.
Mashed potato.

In oven proof pan- fry off the leek and onion in some butter till soft, add chicken and continue to fry till its cooked on the outside. Sprinkle to flour and stir. Then add the remaining ingredients. Bring to the boil and I cooked it at 150 degrees (in a fan oven) for about 50 minutes.

Then later in day topped it with mashed pots and grated cheese... and cooked for 20 minutes. I'll definitely be trying it again... so any recommendations/improvements would be great...

Hi

I generally find that if I coat the meat in flour at the beginning that that usually provides enough starch to thicken.

I would be tempted to vary it by taking out the tomato and maybe adding some mushrooms. Also, maybe taking out the apple juice and adding some milk.

What do you think?

CHICKEN PIE WITH CHEESY MASH TOPPING

Suitable from 10 months

This comforting chicken pie is easy and cheap to prepare. You can either make one large family dish or prepare individual child portions in ramekin dishes and pop them in the freezer so that you have a supply of tasty nutritious meals on days when you don’t want to cook..

Serves 4 to 6
Prep time 25 minutes
Cook time 55 minutes
Suitable fro Freezing


3 chicken breasts (350g total weight)
30g/1 oz butter
1 small onion finely chopped
Half a leek roughly chopped
2 carrots, roughly chopped (225g )
One and a half tablespoons white wine vinegar
30g / 1 oz plain flour
300 ml / ½ pint full fat milk
150 ml / ¼ pint chicken stock
2 tsp lemon juice
50g / 2 oz Cheddar cheese grated
1 tbsp parsley, chopped
Salt and freshly ground black pepper (for babies over one year)

Potato Topping
650g potatoes, peeled and chopped into large pieces
3 tbsp milk
A generous knob of butter


Pre-heat the oven to 180 C or 160 C Fan/ 350F/ Gas Mark 4.

Put the chicken into an ovenproof dish, season and cover with boiling water. Cover with foil and poach in the oven for 25 minutes or until just cooked.

Melt the butter in a saucepan. Add the onion, leek and carrot and cook for about 7 to 10 minutes until just softened. Add the vinegar and cook until it has evaporated, then add the flour and cook for one minutes. Add the lemon and then gradually add the milk and stock, stirring all the time until thick and simmering. Add half of the cheese and the parsley, then season well.

Chop the poached chicken into small cubes and stir into the mixture, then either pour into a 2 pint ovenproof dish or some ramekin dishes to make individual portions.

Meanwhile, cook the potatoes in boiling salted water until tender. Drain and mash with the milk, then spoon over the top of the chicken mixture and sprinkle with the remaining cheese.

Bake for 30 minutes until golden brown and hot in the middle.

MAKES 4 to 6 PORTIONS

silly question time but if freezing do you first cook for 30 mins then cool and freeze or freeze before 30 mins cooking and then cook after defrosting?

I introduced chicken to my 6 1/2 months old son today but I don't think he loved it very much. The taste was very blah.

I was told to boil the chicken with the vegetables and blend them all together...no salt, butter, oil, etc...Is it okay to introduce those ingredients for the first time like you mention in your recipe?

I'd recommend having a look at Gill Rapleys Baby Led Weaning Book. It's incredibly useful even if you dont follow that method of weaning. We went down this route and my little man loved proper food from 6 months old - as we would eat it (being very careful not to add salt and to track salt from other sources like bread) . It wouldnt all have been eaten by any means at 6 months - but I wouldnt hesitate to use these ingredients. (Providing you follow the few guidelines/rules ... such as your child must be able to sit up unaided...)
