Lemon & Garlic Chicken Kebabs
Made these last week and they were so delicious we wanted more!! Am making them for my weekend away too
Ingredients:
- Diced chicken breast (as much as you need to make the amount of kebabs you want)
- Orange & Yellow Pepper cut into large chunks
- Red onion cut into large chunks
- Mushrooms (I used closed cup) halved
- Olive oil
- 1/2 Lemon
- Dried Thyme
- Garlic puree
Method:
- In a bowl, add some olive oil (didn't measure it out, just glugged it in so it looked enough to marinate chicken)
- Add a good sprinkling of Thyme
- Grate the rind of the lemon and squeeze in the juice
- Add the garlic puree, again, a good squeeze (approx 2 tsps)
- Give a good whisk together till combined then add the chicken, stir, then cover and put back in the fridge to marinate for at least 30 mins
- Once ready, thread all the ingredients onto skewers and grill until cooked
Very yummy!

mmmm they sound yum, I have a thing for lemon at the moment! plus Freya thinks kebabs are lollipops and will eat anything if its a lollipop!!!!!
PLanning a bbq on sunday and these sound delish

They really are, it's always a risk when I experiment (which is also why amounts are so vague, sorry) but these were so yummy, we both wanted more and had already had 2 each!!!!  Hope you enjoy them too xx

They sound lovely! I love lemon chicken! Im always doing lemon chicken for my salads at the moment and Evan loves kebabs aswell. I think he likes anything that he can eat with his his hands, so will defaintely have to try this one out!

I got hungry reading this thread so made them tonight with my bessy mate, chicken, lemon rind, lemon juice, glugs of olive oil and White wine, corriander, salt, pepper and plenty of garlic = yummy
