Smile Roasted vegetable Couscous

Hubby and I are new to eating couscous. I have been trying to get him to try it for years but he point blank refused until he tried one I got from Waitrose and has since been addicted

So today I made up my own version for my Mum's B-day BBQ today and it was yum even if I do say so myself

(Makes a huge amount BTW cos I just had no idea how much it swells up so you can adjust by halving quantities)


10oz dry couscous
500ml Vegetable stock
1 orange Pepper
1 yellow pepper
1 courgette
Half a red onion
half tin chickpeas
Olive oil
1 tsp ground coriander
1 tsp ground cinnamon
1 tsp ground cumin
salt & pepper if required



Preheat oven to 180

In a bowl, place couscous.

In a jug, make up stock and add the cumin, coriander and cinnamon and stir until dissolved. Pour over couscous, then cover tightly with cling film and leave for 5-10 mins until cooked and liquid absorbed.

meanwhile de-seed peppers and cut into quarters. Cut the half onion into half again and slice the courgette lengthways into 2 halves. Place into a roasting tin and drizzle with olive oil. Put into the oven and cook for about 10-15 mins until veg starting to go soft and pepper skins beginning to blister. Take out of the oven when soft and leave to cool slightly.

When couscous ready, add a little olive oil (about 1-2 tbsps) and fluff through with a fork. Add salt and pepper if desired and stir in chickpeas.

Peel skins off peppers and dice all the roasted veg (small) and add to the couscous.

Mix together and serve

cor blimey claire, i had this (well simialr) for tea tonight funny enough!! the kids always eat it all up no probs, lovely cold the next day, or spiced up and put in a wrap with sour cream

Might give this a whirl Claire, I like couscous although OH not keen.

I never would add veg to it, always accompanies something else iykwim.

Hubby just wouldn't even try it for years, didn't like the look of it but he gave in and tried it and now we eat it all the time LOL. This was really nice, hubby had more last night when we got back Hope you like it xx

LOL, thats my OH too!! he really doesnt like cous cous but always eats it (and all the other stuff he moans he doesnt like) but i say when he cooks a meal THEN and ONLY then can he moan about whats for dinner
