Default Devilled Chicken

My lo loves this as it is easy to eat - especially with a peshwari naan in his chubby fingers - he loves dipping it in!! You can mike this a bit hotter with extra curry powder depending on your tastes! It's a good family meal that is really quick to cook as there isn't really any measuring. It's also cheap and we usually have all the ingredients in the cupboard so it's good as a middle of the week meal when supplies are low! This is more than enough for 2 adults and 2 children

6 chicken thighs

for the sauce:
2 heaped tbsp plain flour
2 oz butter (melted)
pinch of sugar
1 tbsp worcestershire sauce
3 big tablespoons branston pickle
1/2 tsp mustard
1 tsp medium curry powder
handful of sultanas

half pint chicken stock

Put all the ingredients, apart from the stock, in a bowl. Mix together. Put the chicken in a casserole dish and paste the sauce over it. Pour the hot chicken stock on top. Put in the over for approx 1 hour on 180 deg c. Serve on a bed of rice with a naan and a poppadom.

NB You can make the sauce thicker by increasing the butter by an oz and the flour by a tablespoon.
For a hotter curry add more currey powder

Also - I fork the chicken off the bone before giving it to Thomas so that is is easy for him to eat -it is so tender it just falls off!

Like the sound of it bar the pickle, can you leave that out or would it really alter the taste?

I like the sound of it too but like Claire i wouldnt fancy the pickle in it,so i think i would use balsamic vinegar,a smidge of cumin & a squirt of tom puree instead.

I know it sounds really odd - and I don't like pickle in sandwiches or pork pies or anything really - but it doesn't taste of pickle - just a fruity curry! Try it and see if you like it - I know it sounds weird and I don't know why it works but it does

So I assume you mean the proper big pickle, not the sandwich pickle? I like ham & pickle sandwiches but only using the small sandwich pickle and even then I only have a tiny smidge. Am such a wuss when it comes to trying new things
