Default Veg & Lentil Curry

Made this for dinner tonight & it went down really well,plus there is loads of hidden veggies in it

1 onion
1 yellow pepper
2 med carrots
1 large sweet potato
1/2 a cauliflower
Small handful of frozen peas
1 tin of chopped toms
200ml of veg stock
1 tsp garam masala
1 crushed garlic clove
1/4 tsp ginger
1/4 tsp paprika
1/4 tsp turmeric
Small handful of dried red lentils

Roughly chop the onion,pepper & carrot & cook in a little oil for about 5 mins.
Blend with a hand blender till smooth.
Peel the sweet potato & chop into 1" cubes.
Place all the spices & garlic in the pan with the smooth sauce.
Add the sweet potato & chopped toms & half the stock.
Cook for about 15 mins.
Chop the cauliflower into small florets & add to the pan,add the peas & lentils also.
Pour over the rest of the stock & cook for a further 10 mins.
Check the potato is cooked through,it should be.
The sauce should be nice & thick.

We had ours with naan breads but you could have yours with rice.
You can change any of the veggies or add more if you wish.

Just wanted to say - I tried this and it was yummy - Dominic loved it too, ate the whole lot!
