Talking Lemon Breaded Sole recipe for Susie

Hi Susie,as requested,

3 sole fillets
1 lemon
4 slices of wholemeal bread whizzed into breadcrumbs
Cracked black pepper
1 egg
Flour for dusting

Preheat oven to 180c
Roll the fish fillets in the flour,then the egg,
Grate the lemon into the breadcrumbs & then squirt the juice of 1/2 of it in as well,then grind a good amount of black pepper in as well
Place the sole in the breadcrumbs & then place on a lightly greased tray,then cook for about 15-20 mins.

The sweet potato wedges were just sweet pots peeled & sliced into 1" thick wedges,i put them in a snappy bag,then spray them with a low fat spray & a good sprinkle of paprika,hold bag at top & give a good shake.
I cooked them for about 30 mins.

thanks paula. I use rice flour cause bread is not good for me-you think I can use this for flouring as well as for crumbs? also what is cracked black pepper??? and what's a snappy bag??

Hi Susie,you could try your rice flour,i have never used it but i dont see why not.

Cracked black pepper is whole peppercorns just put through your pepper grinder.

Snappy bags are just little plastic bags,you could use a tub with a lid,its just so that all the wedges get covered in the paprika.
