Default Anyone know how to cook Quinoa?

Also would love a good recipe aside from plain cooking it.

But a recipe with no tomatoes, peppers....

Good question. I have been looking at including better grains in our meals and have been looking at my quinoa (I only have about 1/2 cup left and the grocery store seems to be perennially out of it). In the past, I have used it for making a salad for lunch (cook it plain, then dress it with lemon juice and olive oil and some diced veggies like cucumber, tomato, peppers, that kind of thing).

I did make a Quinoa Vegetable soup (from all recipes. com) the other day and it turned out ok. I read the reviews and knew to precook the quinoa and put it in for the last few minutes of cooking (someone mentioned that prolonged cooking made it fall apart). I will be honest, I found it wasn't great in the flavour department, and added some tumeric (supposed to be super healthy for you) and it was ok. Quinoa Vegetable Soup - Allrecipes

Can't vouch for them, but these are all the quinoa recipes on all recipes.com to browse. Some look decent. Allrecipes - Recipe Search

Good luck!

Ooooooohh I just looked at the recipe you posted Alexander's Mummy. Now that looks great! How easy is that! Now I need more quinoa...

Could you use coconut milk or something else to substitute?

no cocunut milk either.

Did find a recipe I will try later.

Quinoa and sweet potato

Cut onion in slices and saute in olive oil till see throughish
add cup quinoa and mix. Add black pepper, salt and garlic powder per taste. Add boiling water to mixture (you want to cover the quinoa and then add same amount of water (so water double height of quinoa).
Cut sweet potao into slices and add to water that is on quinoa.

Lower flame to low, cover and cook about 30 minutes or until sweet potato soft.

Will let you know how it goes.
