Hi all, hope you and all your little one's are well!
Thought I would share this recipe with you, as I've been making it for a while and we all really enjoy it.
It's very simple but very tasty!
Ingredients:
3 chicken fillets (I use good size one's from the butchers)
Seasoned flour
1 lightly beaten egg
Breadcrumbs, about 2/3 slices of white or brown bread.
1 large or 2 small shallots, finely chopped
1 clove of garlic, crushed
Half or 3/4 of a pack of cherry tomatoes, halved or quartered
Sliced cheese of your choice
Olive oil.
Preheat the oven to 180 degrees.
Preheat your grill.
Method:
Heat some olive oil in a small saucepan, then add the chopped shallot and fry for a few minutes. Add the garlic and cook for a few minutes more, then add the tomatoes. Stir well for a minute or so then leave to simmer on a medium to low heat, so the tomatoes break down, stirring occasionally.
Meanwhile, heat some more olive oil in a large frying pan. While your pan is getting hot, bash your chicken fillets so they are a uniform thickness all over.
Coat in the seasoned flour, dip in the egg, then roll in the breadcrumbs.
Place the chicken into the hot frying pan and fry for a few minutes each side, until nicely golden on both sides.
Remove from the frying pan and place on a baking tray. Put the chicken in the oven and cook for about 10 mins or so at about 180degrees. (Time will depend on how large your chicken fillets are)
Once the chicken is cooked all the way through, remove from the oven. Top each chicken fillet with a good couple of spoonfuls of the cooked cherry tomatoes, then top each one with some sliced cheese.
Place under the grill until the cheese has melted and is bubbling all over.
Serve with veggies of your choice, we have sauted new potatoes with ours.
You can of course cook your chicken in the frying pan and not put it in the oven, but I find that flash frying it then oven cooking it makes the chicken really tender and it doesnt lose any moisture, IYKWIM.
