Default Curried Parsnip & Apple Soup.

We had this for lunch today made up from bits and bobs I had left in the fridge and it went down a storm .

Curried Parsnip & Apple Soup


Makes 4 medium portions. Suitable for freezing.

Ingredients

3 medium parsnips - peeled & diced
2 medium apples - peeled & piced
1 medium potato - peeled & diced
Half a large onion - diced
2 cloves of garlic - crushed
1 pint of hot stock - I used chicken
1 heaped teaspoon of garam masala
A good pinch of cinnamon
A pinch of black pepper
1 dessert spoon of olive oil

Method
  • Sauté the onion & garlic in the olive oil for a few minutes until opaque.
  • Add the diced parsnip, apple, and potato and sauté for a further 4 to 5 minutes.
  • Add the hot stock, garam masala, cinnamon & black pepper and bring to the boil and simmer for 20 minutes or until all the vegetables are softened.
  • Blend to desired consistency and serve.
We served this with crusty bread and peanut butter.
