5 veggie fish pie
This is a dish i make when its near to shopping day as it uses a lot of different things up.
1 swede
4 carrots
4 parsnips
Good sprinkle of peas
Button mushrooms
200g of soft cheese spread
100ml veg stock
4 cod fillets cubed
1 tin of salmon or tuna (depends on how near to payday it is)
Parsley
Preheat the oven to 180c.
Peel & chop the swede,then boil for 15mins.
Add the sliced carrots then boil for another 10mins.
Mash them both together & set aside.
Using your veg peeler slice the parsnip into very thin slices & boil for 5 mins.
Set aside.
In a seperate pan stir the soft cheese & stock together,adding a little flour if it looks thin.
Add the cod & tinned fish.
Add the peas & mushrooms & parsley.
Tip into an ovenproof dish & then layer with the sliced parsnip.
Then over the top spoon the swede/carrot mash,then cook for 25-30mins.
Makes loads too.
