With finger food it's all about learning so playing usually comes before eating. It's all about figuring out textures etc before really figuring out what to do with the actual food so playing with it is actually an important learning step. Yes it can be annoying and messy and worrying when they don't appear to eat much, but it is important.
With regard to using pouches and not wanting to weat home made food unfortunatley it seems to be common enough for babies to not want to switch from commercial food to homemade. Commercial food tends to be blander and sweeter, and as a result once they are used to it they don't necessarily like home made as much mainly due to the taste. I very much doubt it is a texture thing with your LO as, if I remember correctly, you did say previously she like chicken nuggets and chips so I do think it is more the taste rather than the texture that she does not like.
Judging by your posts you seem to be making alot of different and highly flavoured things all the time but with very little success. It might be time to go back to basics, try and get her started in on plain fruit, plain veg, mix the two together if necessary. Apple and pear are great to mix with lots of veg, especially the root veg. Maybe try simple chicken dippers and home made fish fingers as well as home made oven chips made from real potatoes, and roasting other root veg in the same manner to make veg chips. For pasta try just tossing it in a little butter or in a simple cheese sauce. Some children just prefer plainer foods. It is frustrating when you would like them to be eating everything that you do, but they won't always do so.
