Red face 1st posting Tuna

Hi this is the first time I've posted on here. My son 18 months is a very fussy eater doesn't eat veg, mash, pasta and many other things I can't think of. I've just recently found out that he loves tuna buns but I would like to put it into a meal but every time I try the internet all I get is tuna past and such. Is there anybody out there who could help me with some recipes or some different kinds of foods, I feel all full as he's living off waffles and chips.

Default tuna recipes

Hi there
I know you have posted your blog months ago. And I hope that since then your son has started eating a bit more.
Anyway I thought I still might post my idea of having tuna.
I usually mix tuna with two or three hard boiled eggs, sweetcorn and some mayo. It tastes great on a peace of toast. And you have carbs, proteins and a little bit of veg. plus the tuna.
let me know what you think.
If making pasta, i know you said you are a bit fed up of pasta, but have interesting recipe for that too.
pasta
tuna
sweetcorn
basil pesto
asparagus from a can
and pine nuts

My kids and I love Tuna mixed with sweetcorn and Creme fraiche insidea pitta bread... sooooo good Mmmmmmmm x x x x

Hi i can give u an idea...might sound silly but i love it
This is something i came up with myself seeing that there is only limited options for tuna recipes..
So you could make tuna curry...Yes Curry
My son would only eat curries with rice or with flatbread/nan bread etc. He wasnt eating tuna at all, so i made up some curry sauce(obviously with less salt and less chilli) and added tinned tuna in the end, thats it...he likes it and trust me it tastes good too.
you can make up ur own version but thats how i make mine,
Fry the chopped onion(half) in 1tbsp olive oil or u can also use the oil from the tuna tin. when slightly golden add 1 crushed garlic, and 1/2 tsp crushed ginger, cook for 1 minute then add one chopped tomato, salt(only if u want, but not when u using tuna in brine), little chilli powder(my son loves chilli kick), pinch turmeric, 1/2 tsp coriander powder, pinch garam masala if you want..cook until the tomatoes are completely melted and forms a think paste, then add 1 tin of tuna chunks, sprinkle some water so it doesnt catch on the bottom..and steam it on low flame for few minutes...tuna curry is ready, serve it with rice or with pitta/naan/flat bread etc.
