Default Fussy 6 yr old and 8 yr old

I have read and enquired about all the fussy eater books/recipes and they always contain foods my two fussy eaters don't eat.
Its getting very boring as I don't serve different meals, on occasion i may add some raw vegetables to their plate.
Here's what they don't eat: Mince, Pasta, cooked vegetables, mashed potato, rice, beef in sauce (ie. beef stroganoff)
8 yr old only eats carrot, sometimes lettuce, minimal fruit, doesn't like milk, sometimes likes ham, she likes crumbed chicken.
6 yr old eats a carrot, lettuce, cucumber, tomato, all fruits, loves milk, eats ham, doesn't like crumbed chicken.
Its hard to please everyone and i definitely want to eat more variety. I love my one pot dinners or pasta bakes or fritatas, or cheesy cooked vegetables or roasted vegetables, but when i serve these which i still do but not as often it all goes into the bin.
Anyone can help with a website or book they have found with more ideas.
