Get some fruit juice, or puree thinned down with a little water or milk/cream for a fruity milk jelly, and add gelatine.

I use gelatine leaves as I find them very easy to work with. You just soak them in cold water for 5-10 minutes, then add to a little warmed juice, stir till dissolved and then add the rest of your juice. Fridge till set. Whatever gelatine you use (powdered or leaves) will usually have instructions on the packet and tell you how much to use for the volume of liquid that you have.

Not much help on the pureed food I'm afraid as we moved on from that pretty quickly when we were weaning. We did all the fruit and veg to start with then quickly moved on to lumpier dishes.

Have you tried her on finger foods at all. She should be well out of the pureed food stage by now, and the older she gets the harder she will find it to get used to it. If she's not used to dealing with lumps and properly chewing her food then she is bound to run into gagging issues when confronted with lumpier foods. I would try her on finger foods as much as possible and encourage her to start eating more normal foods that way instead of constantly blending things up. Maybe start off with softer things, soft fruit like banana and berries, steamed apple or pear, steamed veg, well cooked pasta.
