Default Chicken Patties

Hi - Does anyone have the recipe for Chicken Patties - I bought the ingredients on Wednesday and now can't seem to access the recipe online??!!

Mini Chicken Patties:
Makes 30 portions
Suitable for freezing
From 9 months

Half red onion finely chopped
1/2 medium carrot coarsley grated
half medium apple peeled cored and grated
3 tbsp sunflower oil
half tsp fresh thyme chopped
1 clove garlic crushed
1 slice white bread with crusts removed
250g / 9oz minced chicken
half crumbled chicken stock cube (for babies one year and older)
salt and pepper

In a large frying pan cook the onion carrot and apple in one tbsp of the oil for 4 mins.
Stir in the thyme and garlic and cook for one minute. Remove from the heat and allow to cool slightly.
Meanwhile put the bread in the food processor and whiz into crumbs.
Add the onion mixture and chicken and crumbled stock cube (babies over one) whiz for one to 2 mins to combine.
Wipe out frying pan with kitchen paper then add remaining 2 tbsp of oil.
Put over a medium heat and drop in teaspoonfuls of the chicken mixture.
Flatten the patties in the frying pan slightly using a spatula or fork until about half cm thick. Fry for around one and half minutes each side until golden brown and cooked through. Cook in batches of 6 to 8.
Drain on kitchen paper before serving.

Tip: Use minced chicken which contains both brown and white meat. The brown contains twice as much zinc as the white meat.

Tip: The freeze put the patties on a baking sheet lined with cling film. Cover with more cling film and freeze until solid. When frozen transfer to a freezer bag.
