Default Using Stock

I have a quick question about using stock in receipes, my baby is 10 months now and would'nt have time to make my own stock, (working full time) is it ok at this stage to put a stock cube into the receipe? I'm afraid to because of salt content, but just wondering what others do, for example I want to make the Mini Fish Pie receipe but it has vegetable stock in it. Just wondering what others do? Many thanks

Don't use normal stock cubes they have way too much salt in them. Either look for low salt stock cubes (Kallo make a low salt veg stock cube) and I think Boots sell some too. If you can't get them use water.

If you can find a few minutes some weekend it's worth making up a batch of veg stock and freezing it. For veg stock I just scrub and roughly chop assorted veg (onions, leeks, carrots, celery), throw them in a pot with a bay leaf and some peppercorns, cover with water and simmer for about an hour. Then I simply strain it, cool it and pur it into ice cube bags and freeze it.

If I don't have any home made stock then I either use the Boots organic baby stock cubes (think they are about 1.50 for six) or the Kallo organic low salt ones. x

I've been buying the boots stock cubes at the mo they are 2 packs for £2 x
